Jaywalk Straight Rye Whiskey

Flavor beyond the generic spice — the rye that names the bar.

Jaywalk Straight Rye Whiskey

Take a walk on the wild side of rye. Jaywalk Straight Rye highlights a combination of Horton Heirloom Rye and our original Field Race Rye, both grown organically in the Finger Lakes region of New York. The finished blend combines barrels six, seven, and eight years old, bottled at 92 proof. With intention and attitude, it defies the typical notion that rye is just about spice. Drink like a New Yorker and enjoy a Manhattan. Our Bushwick bar, Jaywalker, is named for this line.

The Specs

ABV
46%
Grain
75% rye (Horton Heirloom + Field Race), 13% corn, 12% malted barley — grown in the Finger Lakes, aged in 53-gallon char #3 oak.
On the palate
A honeyed nose of ripe apricot and peach; dark caramelized floral sugars, candied pineapple and mango on the palate. The interplay of sweet and spice makes an ideal mixing rye.

The Story

Horton rye came to New York in the 1600s — its roots trace to the town of Rye itself — and all but vanished; nobody had tasted it in over 150 years. Ten recovered seeds and thirteen years of Finger Lakes farming brought it back. The full resurrection story lives with the Heirloom bottling.
