Meet Bernadette
The purpose-built, copper-domed beauty at the distilling heart of what we do. She refines our spirits with an exacting standard that knows no quit, and never complains about the music.
Drop by this weekend to taste the fruits of her labor — her Martini might just be the best in Brooklyn.

From ten seeds to your glass
- Ten seeds. Horton rye — a 17th-century New York grain — rediscovered at the Cornell Seed Library and entrusted to one devoted team.
- Thirteen harvests. Tested, refined, and scaled on our farm in the Finger Lakes. Our field of rye now stretches more than 250 acres.
- Distilled in New York. Grown, harvested, distilled and matured in New York.
- Poured at Jaywalker. Bottled and served in Bushwick, sold around the world.

Where it’s made
Urban distillation
Rye and gin distilled in Brooklyn on a copper still you can see from the bar.

The 13-year rye
Heirlooms and Patience
Jaywalk began as ten heirloom seeds and thirteen years of growing, testing, and aging before the first bottle.
The short version
Two spirits, done well.
A New York gin that honors its namesake with aplomb. And a rediscovered New York rye, returned after 150 years gone.
The grain matters.
Our rye is grown from a 17th-century varietal, native to Rye, New York. It tastes different because it is different.
The history is real.
It is in the grain, the names on the bottles, and the room.
The room is the product.
We keep it fresh with weekly events, so a visit to Jaywalker never feels stale.
Made here.
Grain from upstate, distilled in New York, poured twenty feet from the still.
