Jaywalk Heirloom Rye
A lost American grain, reclaimed — one barrel at a time.
The long project, bottled. Jaywalk Heirloom Rye is 75% Horton rye — a varietal not commercially grown since the 1800s — aged seven years and bottled wholly at cask strength (114–116 proof). Each meticulously selected single barrel is wax-sealed, individually inscribed, and presented in its own gift box. Every bottle comes from one barrel, with characteristics that can’t be replicated. You’ll never taste whiskey exactly like this again; you’ll remember it the rest of your life.

The Story
Horton rye came to New York in the 1600s — its roots trace to the town of Rye itself — and all but vanished; nobody had tasted it in over 150 years. Working with Cornell University's College of Agriculture and the Pedersen Family Farm in Seneca Falls, we started with ten seeds and spent thirteen years turning them into a proprietary crop large enough to distill. The patience is the point. So is the flavor it brought back. That's why we call it Heirloom — treasure it. We do.
